I donāt know about you, but one thing that gets me through my summer outdoor chores on the farm is knowing I have a helluva good drink waiting for me when I get done.Ā
(Amen!)
Without further ado, here is one of my favorite summer mocktail recipes.
Youāll need:
A glass or mason jar
Ice
Juice from a lemon or lime
Topo Chico (Or another sparkling water of your choice)
A splash of rhubarb simple syrup
To make the rhubarb simple syrup:
You need ā¦
4 cups chopped rhubarb
1 cup water
1 cup sugar
Bring everything to boil in a heavy bottomed pan. Reduce heat and let simmer for 20 min.
Set a fine mesh strainer over a bowl and pour the rhubarb over the bowl until most of the liquid is in the bowl.
Pour syrup into a lidded jar and refrigerate. It will keep for a long time in the fridge.
āØBonus ā The rhubarb sauce leftover from this recipe is delicious to eat on its own, on ice cream or to use as jelly on your toast! YUM!
To make the mocktail:
Simply mix all the ingredients together in a glass or mason jar and enjoy.
Boom. You just used up all your rhubarb and have something to look forward to when youāre hot, tired, and slightly sweaty from working outside.Ā Whoop whoop!
