My Favorite Summer MocktailšŸ¹

I donā€™t know about you, but one thing that gets me through my summer outdoor chores on the farm is knowing I have a helluva good drink waiting for me when I get done.Ā 

(Amen!)

Without further ado, here is one of my favorite summer mocktail recipes.

Youā€™ll need:

A glass or mason jar
Ice
Juice from a lemon or lime
Topo Chico (Or another sparkling water of your choice)
A splash of rhubarb simple syrup

To make the rhubarb simple syrup:

You need ā€¦

4 cups chopped rhubarb
1 cup water
1 cup sugar

Bring everything to boil in a heavy bottomed pan. Reduce heat and let simmer for 20 min.

Set a fine mesh strainer over a bowl and pour the rhubarb over the bowl until most of the liquid is in the bowl.

Pour syrup into a lidded jar and refrigerate. It will keep for a long time in the fridge.

āœØBonus ā€“ The rhubarb sauce leftover from this recipe is delicious to eat on its own, on ice cream or to use as jelly on your toast! YUM!

To make the mocktail:

Simply mix all the ingredients together in a glass or mason jar and enjoy.

Boom. You just used up all your rhubarb and have something to look forward to when youā€™re hot, tired, and slightly sweaty from working outside.Ā  Whoop whoop!
